A few words about freeze-drying
Freeze-drying (lyophilization) is a food preservation method that involves drying fruit after freezing it. Between 70% and 96% of the water is removed from the frozen fruit. This method not only protects the product from spoilage but also preserves its valuable nutritional value.
During the freeze-drying process, there is no loss of nutrients (protein, carbohydrates, or fats), vitamins, or biologically active substances. Furthermore, fruits preserved using this method retain their natural color, shape, and, most importantly, aroma. Freeze-dried foods are particularly popular among Himalayan climbers, mountaineers, hikers, cyclists, and sailors.
