- 1 tablespoon extra virgin olive oil
- pinch of salt
- 200g red cabbage
- 1 large carrot or 2 small ones
- 1/2 greenhouse cucumber
- 1 red pepper
- 3 green onions
- a handful of fresh coriander
- 70g peanut butter
- 3 tablespoons tamari soy sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- 2 tablespoons lemon juice
- pinch chili
- 30g peanuts(for topping)
Preparation of Quinoa
Step one is to cook the quinoa. We need a medium-sized pot and a tablespoon of olive oil. Roast the quinoa at high temperature for two minutes to make it loose and crispy. Then add a pinch of salt and two portions of water for one cup of quinoa. Cook the quinoa covered for fifteen minutes.
Preparation of Vegetables
In the meantime, we cut the vegetables. We start with 200g of red cabbage, which we cut into small cubes. Then peel one large carrot or two small ones and cut them into thin strips. Peel half the cucumber, remove the core and cut into small pieces. Cut the red pepper, removing the seeds. Cut three green onions into small pieces. The cilantro is optional, but adds great flavor.
Preparation of the sauce
Now let's move on to the sauce. The base will be 70g of peanut butter. Add three tablespoons of Tamari soy sauce, one tablespoon of apple cider vinegar and one tablespoon of maple syrup. Then add two tablespoons of lemon juice and a pinch of chili. Mix everything thoroughly until you obtain a smooth consistency.
Combining Ingredients
When the quinoa cools down, add it to the chopped vegetables. Mix all ingredients thoroughly. Our colorful salad is ready! Remember to add the sauce immediately before serving so that the salad does not get soggy.
Optional Extras
Finally, we can add gently crushed peanuts. This is an optional ingredient, but it adds crunch and flavor.
