Nutritional yeast – cheesy flavor without a gram of cheese
Nutritional yeast consists of dried yeast that has been deactivated, meaning it no longer ferments. It won't make dough rise, but it works great as a seasoning. It has a distinct umami flavor that many people associate with cheese, which is why it is so often used as a parmesan substitute in vegan cooking.
We have two versions: organic nutritional yeast with an ecological certificate and conventional Primär nutritional yeast. Both contain only one ingredient, which is yeast, with no added salt or wheat. The organic version has 34 g of protein per 100 g, while the Primär version has 46 g.
The simplest way to use it is to sprinkle it over pasta, a salad, or popcorn. When mixed with a little water or broth, it makes a quick "cheesy" sauce for pasta and casseroles. You can also add it to sandwich spreads and fillings, or use it instead of breadcrumbs for coating.
