- 15g of tapioca
- 80 g of oat milk
- 20g maple syrup (2 tbsp)
- 1 egg
- coconut oil , ghee or other fat for frying.
For spices, you will need:
- 1 teaspoon bourbon vanilla
- 1 teaspoon of baking powder
- pinch of salt
How to prepare almond pancakes?
Step 1
In a large bowl, mix the wet ingredients - egg, maple syrup and oat milk.
Step 2
In another bowl, add the almond flour, tapioca starch, and spices. We mix.
Step 3
We mix the wet ingredients with the dry and our dough is ready. As you can see, it literally takes a moment.
Step 4
The dough is ready, so we proceed to frying. You can use any fat for this - coconut oil, clarified butter or olive oil.
Step 5
Fry each pancake for about 2-3 minutes on one side. Be sure to set the temperature to medium as they can burn easily. We also do not put too much dough, because we used baking powder and the pancakes will surely rise. So we keep the minimum spacing between them.
When we see from the bottom that the pancakes are slightly toasted, we change the side.
PASS
Pancakes are ready, about 6 medium pancakes came out. As for the texture, they are soft, fluffy, very good. Serve sauté or with your favorite toppings. Enjoy your meal!
