Organic Unroasted Buckwheat Groats

Buckwheat groats have been known for centuries, mainly due to their nutritional properties. They are an excellent addition to the daily diet. Our groats are made from unroasted buckwheat grains, which are first subjected to a thorough sorting and hulling process. White buckwheat groats have light grains and a characteristic taste, distinctly milder than that of roasted groats.

What is the difference between unroasted and roasted buckwheat groats?

The difference comes from the production stage. Roasted groats undergo roasting, which gives them a dark brown color and a strong, slightly nutty, toasted aroma. Unroasted groats skip this stage, and their grains remain light cream-colored. Thanks to this, the taste is delicate and definitely less dominant. White buckwheat groats work better with the rest of the dish, not overshadowing it with their character. People for whom roasted groats are too intense often choose it.

How to cook buckwheat groats?

Start by rinsing the groats with cold water. This will remove fine dust that can make the grains stick together. Pour water over the groats in a ratio of one part groats to two parts water, add a pinch of salt, clarified butter, and bring to a boil. Then reduce the heat and cook, covered, until the water is absorbed (approx. 5 min). Unroasted groats are more delicate than roasted ones and need less time. You can check earlier if they are ready. Finally, remove the pot from the heat and leave the groats covered for 15-20 minutes. This is when the grains finish cooking and separate. Do not stir them while cooking, as this is the easiest way to get a sticky mass instead of fluffy groats.

What does white buckwheat groats pair with?

The mild taste makes white buckwheat groats more versatile than roasted ones. It works classically as an addition to meats, sauces, and stewed vegetables, but it also performs well when roasted groats would be too strong. It will work in cold salads, stuffings, for stuffed cabbage rolls and dumplings, in vegetable cutlets, in soups, as a base for sweet oatmeal, with fruits and nuts. You can keep cooked groats in the fridge for several days and add them to meals throughout the week.

Polish grain from organic farming

Our groats come from Polish organically grown buckwheat, confirmed by the PL-EKO-03 certificate. The certificate means that cultivation is carried out without synthetic plant protection products and artificial fertilizers, and the entire process is subject to regular control by the certifying body. We offer groats in two sizes: 700 g for everyday cooking and 3 kg for those who cook it regularly or want to replenish their stock.

How to store buckwheat groats?

Store the groats in an airtight container, preferably a glass jar, in a dry and cool place, away from light and moisture. Buckwheat grains contain fat; when stored in heat, they lose their taste over time. An airtight jar stored in a dark cupboard is enough to avoid this.
