A chasen is a traditional Japanese whisk for matcha, carved from a single piece of bamboo. One end is split into 100 thin, flexible tines that combine powdered tea with water and aerate the infusion in just a few seconds. You can't achieve this with a spoon or a regular whisk – the matcha remains clumpy, and no foam forms on the surface.
Why 100 tines?
The number of tines determines how the chasen works in the bowl. One hundred is the classic choice for usucha – a light infusion that you drink every day and which is also the base for matcha latte. The densely arranged, thin tines introduce many small air bubbles into the tea, making the foam thick and smooth. Whisks with fewer, thicker tines are mainly used for koicha, which is very thick matcha that is mixed rather than whisked.
How to whisk matcha with a chasen?
Before whisking, immerse the tines in warm water for a minute – they will soften and won't break. Sift a heaped teaspoon of matcha (approx. 1.5 g) into the bowl, pour in about 70 ml of water at a temperature of 70–80°C, and whisk with a quick wrist movement in a Z shape, back and forth, not in circles. Keep the tines just above the bottom, without pressing down. After a few seconds, a thick foam will appear – then slow down, glide the chasen lightly across the surface to break up larger bubbles, and remove it from the center of the bowl. We show the whole process step by step in the video below and on the blog: how to prepare matcha.
How to care for the chasen?
After use, rinse the whisk with warm water without detergent and leave it to dry in a well-ventilated place – standing on its handle, tines up, or on a special stand, tines down. Do not place it on the tines themselves, as they will deform, and do not store it wet in a closed box. Do not wash it in the dishwasher or leave it in water for a long time – bamboo does not tolerate it well.
What to pair it with?
For the chasen, you only need matcha and hot water. Our organic matcha comes from organic farms in Japan, in the Kyoto and Kagoshima prefectures. If you are buying it as a gift or are just starting your matcha journey, check out the Matcha Latte Set – you will find matcha, a chasen, and organic coconut milk in it.
