What exactly is light hazelnut paste? Simply put, it’s one hundred percent hazelnuts, but in a delicate version. Until now, you probably knew our classic hazelnut paste, which was made from whole nuts along with their natural skin. This time, we decided to go a step further and create something unique. We searched for the perfect roasting level, tweaked the temperature, and tested various options to achieve that one dream flavor profile. This fully original approach allowed us to create a light, creamy paste that looks and tastes so good, it’s hard to stop at just one teaspoon.
Why do we peel the hazelnuts?
Why even peel hazelnuts when they’re also good with the skin on? The reason is very simple. The skin of a hazelnut carries bitterness and astringency. When we get rid of it, the nut reveals its new face. It becomes naturally sweeter, milder, and takes on a more milky, dessert-like character.
Getting rid of the skin itself turned out to be quite a technological challenge, though. Blanching, which is the peeling process, requires the right raw material. We quickly discovered that not every variety of hazelnut wants to cooperate with us. Some of them have their shells attached so firmly that no natural methods can gently remove it without damaging the nut itself. We finally found a variety that has a natural predisposition to shed its skin during roasting. Thanks to this, our production process is non-invasive, and the nut retains all its valuable nutritional values and wonderful aroma.
