Banana Bread Recipe – The Taste Will Surprise You

Michał's Favourite Banana Bread

The story behind it is interesting... 20 years ago... in New York, in a shabby little hostel, Michał was served banana bread for breakfast for the very first time in his life. It was something out of this world, something just didn't add up — how can bread be "banana" bread? Bread is supposed to be white or wholemeal, but banana?! These days banana bread has gone mainstream, and today we'll show you a really interesting version of it, enriched with cottage cheese. If you're not a fan of cottage cheese, you can swap it for skyr or Greek yoghurt.

How do you eat it?

The base of our bread will be bananas, but we won't make it with wheat flour — instead we'll use almond flour with chocolate chips. Thanks to this, the bread will melt in your mouth and taste absolutely delicious.

We start by adding two bananas — the riper the bananas, the sweeter the bread will be.

Next, we mash the bananas with a fork — no extra tools needed here.

Now we add one whole egg and two egg whites.

Then we add around 110g of cottage cheese. You can replace the cottage cheese with skyr or Greek yoghurt. You can also blend the cottage cheese smooth, which makes it less noticeable in the final bread.

After that we pour in about 85g of maple syrup.

And we mix everything together in a bowl.

Once everything is nicely combined, we can move on to adding the spices. In our version of banana bread we add two generous tablespoons of Ceylon cinnamon, one teaspoon of Bourbon vanilla, plus 1 teaspoon of baking soda.

Once the spices are in, we give everything another good mix.

Now we add 250g of almond flour.

And finally we add around 100g of chocolate chips (80% now, and 20% saved for the topping), so they melt beautifully on top of our bread.

The batter is ready. To make our bread you'll need any loaf tin and some baking paper (you'll find the paper trick in the video). To grease the tin we'll use coconut oil. One teaspoon of oil is enough. You can spread it with your finger or with the paper, whichever you prefer.

We transfer our batter into the tin and sprinkle it with the remaining 20% of the chocolate chips we saved for this moment.

The oven should be set to 180°C with the fan (convection) turned on.

We put the bread in the oven for 50 minutes. Almond flour and chocolate don't handle high temperatures too well. If the bread starts to brown too much halfway through, we'll cover it with aluminium foil. So let's get to it — we place the tin with the batter on the middle shelf of the oven.

And here's what our bread looks like while baking. In our case, there was no need to cover it with aluminium foil.

The hardest part comes right at the end: after taking the baked banana bread out of the oven, you have to wait at least 30 minutes. It's tough... but if you slice the bread straight out of the oven, it will all fall apart. Half an hour feels like an eternity in this case, but the delicious end result is well worth it... :)
