The truth is, however, that almost every country has its own version of crêpes, whether sweet or savory. Therefore, the debate over their origins is difficult to resolve.
In the aforementioned France, they are served as thin crepes, in the East as home-made blinis, and, for example, in Austria in the somewhat surprising form of a torn and powdered sugar-dusted pancake called Kaiserschmarrn. Poles prefer the American version of pancakes , which are slightly thicker and served sweet with maple syrup. In Poland, this dish is one of the quick and easy to prepare, most often made with wheat flour, eggs, sugar, milk, and sometimes baking powder.
Pancakes have great potential, and depending on the ingredients used, they can truly surprise with their flavor. To make pancakes with coconut oil you will need:
- 180 g coconut oil
- 25 g rice flour
- 25 g coconut flour
- 1 egg
- A dash of coconut milk
- 1 teaspoon agave syrup (plus a little for pouring over the finished pancakes)
- 1 teaspoon baking powder
- A pinch of salt
Preparation:
Mix coconut oil with egg, salt, and agave syrup. Add coconut flour, rice flour—you can find exceptional organic flours in our store—and baking powder. Add coconut milk until the mixture has the consistency of thick cream, but is easily spreadable in the pan. The batter should not drip off the spoon . Set the finished batter aside for about 20 minutes to "mature."
Heat a little coconut oil in a pan (Due to the oil content in the dough, you only need to grease the pan before frying the first pancake. It's a good idea to use a silicone brush for this) and bake the pancakes.
A tip : the thinner the pancakes, the tastier they are, although the batter is quite thick and fluffy, so you can fry them a bit thicker (like a pancake). It's best to cover the pan with a lid to ensure the batter cooks well.
If you make pancakes often, it's worth recommending a special pancake pan, which doesn't stick and always turns out perfectly. It has special flat edges. The key to successful pancakes is the right frying temperature , which is difficult to judge by eye. A pan that's too hot will cause the batter to stick. Too hot will cause the pancake to burn. It's best to check the pan temperature while frying. Therefore, fry the first pancake as a test, assessing the consistency of the batter and the pan's heat.
