A handful of information about freeze-dried chokeberry
The best way for chokeberry fruits to lose their tartness and gain sweetness is to harvest them only after frost. You do not have to worry that they will fall off the bush sooner - they remain on the branches even if they are very mature. Dark blue, shiny balls under the influence of frost become wrinkled and ... dry - because they have undergone natural freeze-drying, i.e. removal of water from tissues using the phenomenon of ice sublimation, i.e. its transition from solid to gas without the liquid phase. For thousands of years, the peoples of North America - the home of chokeberry - have used the process to preserve fruit and other food products, not knowing the molecular basis of sublimation. Pearing at nature led to the development of a freeze-drying technology that was used massively in the processing industry a few decades ago. Aronia fruits, which you can buy in our store, were created in this way: they are first frozen and then dried in special freeze-drying chambers.
Why is it worth using freeze-dried chokeberry
If a competition for the richest source of vitamin P (polyphenols) in the world were held, chokeberry would turn out to be the leader. In no other fruit you will find as much as 4,200 mg of these compounds in 100 g of the product! Thanks to freeze-drying, the chokeberry fruit retains almost all its food qualities. This means that, apart from polyphenols, they also contain a lot of B and C vitamins. There are also many valuable, often rare elements, such as calcium, molybdenum, copper, manganese and boron. This is why people who want to have better immunity, more efficient metabolism, fewer bruises thanks to more tight blood vessels, sharper eyesight and mind, and less problems with skin irritation should reach for chokeberry fruit.
How to use freeze-dried chokeberry
Put a few dark blue fruit in muesli and pour hot water or milk: your cereal dish will not only get a beautiful scarlet-ruby color, but will also become a treasure trove of vitamins and minerals. You can also add the freeze-dried chokeberry fruit, whole or ground, to fruit salads or drinks, the color of which requires livening up and making it more attractive.
Add fruit to preserves, jams or marmalades: the preserves will have a beautiful color and a distinctive flavor (a bit tart if you add more chokeberry balls). You will also enliven them with bland in color and taste apple juice or compote, anemic-looking wine made of light or dark fruit, and fruit jellies.
If you add freeze-dried chokeberry to a cake, every bite of the treat will surprise the palate with its appetizing tartness.
Remember: chokeberry fruits like the company of lemon and honey - the sour taste of the first, combined with the sweetness of honey, perfectly tones the tartness of chokeberry.
