- olive oil
- about 2 tablespoons of lemon juice
- water
- to taste: Himalayan salt, pepper
Drain the chickpeas and simmer for about 45 minutes over low heat. Let the soft grains cool and blend. Add tahini paste (available here) , garlic, lemon juice, olive oil, and optional water until smooth.
