The first mention of sesame can be found in the Old Babylonian records in which it was called the spice of the gods. In ancient times, it was cultivated mainly in Asia Minor, India and Greece. Currently, the largest producers of sesame are China, Mexico and India. The unshelled sesame is beginning to match its shelled counterpart in popularity. First of all, because it is in the thin, almost invisible scales that a huge wealth of nutritional values is hidden. Compared to shelled sesame, unshelled sesame is slightly darker, it may have shades of beige, brown or even red. Its color, however, has no influence on the taste or nutritional properties.

Sesame has a lot of nutritional properties, which is why it was used in the kitchen not only for its unusual taste, but also for health-promoting values. Sesame seeds are a very rich source of proteins, thanks to which they are quickly absorbed by the body, light and easily digestible. They also have a lot of vitamins A, E and B group, as well as minerals: calcium, iron, potassium, magnesium and phosphorus. However, the most important component of sesame seeds are fats that are beneficial to our health, belonging to the omega-3 group and substances: sesamol and sesamine, which are one of the best-studied antioxidants. Paddy sesame has another advantage - it contains a lot of fiber. Including sesame in your daily diet is a great way to provide your body with many valuable ingredients that it needs to function properly.
Sesame is widely used in the kitchen
Paddy sesame has a very wide culinary use. It can be used to make homemade grain bars and homemade muesli. It is a great addition to salads, snacks and dips. It gives all dishes an unusual, oriental flavor. Without sesame, it is impossible to prepare many traditional Turkish or Indian dishes. Paddy sesame goes well with meat and fish. It can also be used to prepare desserts or fruit snacks.
