They are perfect for sauces, pasta dishes, sweet or spicy salads and traditional Italian pesto. A simple vegetable salad with grains and nuts is a great way to snack or for dinner. Dice tomatoes, cucumbers, lettuce, peppers, mix everything in a bowl and drizzle with a tablespoon of olive oil. Sprinkle a handful of pine nuts, sesame, sunflower seeds and pumpkin seeds into your salad. You can choose the seeds freely, depending on your preferences. It all tastes great, and the taste of the dish is emphasized by pine nuts.
Peanut pasta sauce
You can also use pine nuts to create a light, typically Mediterranean spaghetti sauce. All you need is a few dried tomatoes, a handful of peanuts, a tablespoon of olive oil, dried basil and pepper and salt to taste. Chop all ingredients and mix to create a thick paste. Serve with al dente cooked pasta.
