What is Teff (Miłka Abisyńska) and where does it come from
Miłka Abisyńska (Trawa Abisyńska / Teff) is a natural, gluten-free grain that has been grown on the African continent for nearly 4,500 years. Miłka's grains may vary in color from one variety to another, from milky white, through red, to black. The darker the color of the grain, the more aromatic Miłka is. In the world of healthy food lovers, due to its nutritional properties and extraordinary popularity, Abyssinian love has been hailed as the "new quinoa".
An extremely important advantage of Teff grain is its durability during home storage. It is extremely resistant to fat rancidity and pests rarely nest in it. The largest global producer of Miłka Abyssinska is Ethiopia, but it is also grown in South Africa, Kenya, the USA, Canada and Australia.
The flour from Miłka Abyssinian is made by grinding whole seeds, thanks to which the flour contains a lot of fiber. Teff flour is characterized by a light and pleasant taste and a delicate aroma.
Why should we reach for Teff flour more often
Teff is characterized by high nutritional value and contains many essential ingredients necessary for the functioning of our body. Miłka Abyssinian is a natural source of dietary fiber, but also iron, calcium and folic acid. It contains significant amounts of methionine and cysteine and, compared to other varieties of cereals, lysine. In addition, the flour from Miłka Abyssinian, as well as dishes prepared on its basis, have a low glycemic index, without causing sudden spikes in blood sugar.
In terms of the content of minerals and fiber, Miłka Abyssinian is similar to amaranth. However, when it comes to the content of amino acids, Miłka is an almost perfect plant. Thanks to this, it is an extremely valuable supplement to our daily diet, as well as a gluten-free diet.
How best to use the flour from Miłka Abyssinska in our kitchen
The use of Miłka Abyssinian flour improves the texture of our bakery products, their taste and aroma, and also increases the level of their nutritional value. Flour from Miłka Abyssinian has excellent water-retaining properties, thanks to which our baked goods remain fresh and fluffy for longer.
The flour from Miłka Abyssinian, for better results, should be mixed with traditional flour (about 20 - 25%). It is also perfect for thickening sauces, soups and puddings.
