What is a guilty stone
Potassium stone (salt of tartaric acid, potassium bitartrate) is a natural antioxidant of plant origin, which is a by-product of the fermentation of grapes during wine production. This white powder is poorly soluble in water and alcohol. In the list of chemical food additives, it appears under the symbol E336i.
How can I use a potassium stone in my recipes
The potassium stone is more widely known as an ingredient in baking powder. When mixed with baking soda, it acts as an acidity regulator. It is used on its own to stiffen protein foam and increase its volume. Also recommended for home production of candies, lollipops and sweet creams (e.g. icing). It inhibits sugar crystallization. Perfect for baking meringue and soufflés.
If in our recipes we want to replace traditional baking powder with a potassium stone, 1 teaspoon of baking powder corresponds to 1/3 of a teaspoon of baking soda and 1/2 of a teaspoon of potassium stone.
The potassium stone should be stored in a tightly closed container. Preferably in a dry, shady and cool place.
Potassium stone is a natural raising agent that should not be missing in any kitchen!
