What is Kala Namak salt

Kala Namak (black salt or Indian black salt) is a traditional Indian spice with a salty taste and a characteristic "egg" smell. In Indian cuisine, it is used as an addition to spice mixes (eg Chaat Masala), spicy sauces and dips (eg Raitas), spicy snacks and even fruit.

Kala Namak is made from pink Himalayan salt. Himalayan salt is roasted at a temperature exceeding 800 degrees. C, with the addition of charcoal, amla bark and its fruit, as well as khar ash. As a result of high temperature and chemical reactions, sodium sulphide is formed, responsible for the characteristic "egg" smell. The salt obtained in this way is ground or broken into fine granules.

The Kala Namak salt consists mainly of sodium chloride (98%) and traces of sodium sulphate, iron sulphide and hydrogen sulphide. It is the aforementioned sodium chloride that gives black salt a salty taste. Iron sulfide is responsible for the color (from brown-pink to dark purple), and the remaining sulfur compounds are responsible for a slightly bitter taste. The specific smell, however, is the influence of a small amount of hydrogen sulphide.

Egg flavor thanks to black salt

Kala Namak is, above all, a great and irreplaceable spice for vegans. When added to prepared meals, it imitates the taste of a boiled egg. For this reason, it is the perfect addition to vegan mayonnaise, tofu scrambled eggs, bread paste or cottage cheese.

What kind of Kala Namak salt is best for?

Kala Namak can also be used to flavor traditional Raitas, Asian yoghurt-based dishes, and numerous salads, including fruit salads. It works great as a seasoning for pasta, rice, fried dishes, as well as fish or egg dishes.
