During very slow heating process, the layer of solids and liquid separate from each other. As a result, we get the healthiest and purest fat. It’s definitely healthier than margarine and refined oils, which is way more appreciated in everyday kitchens. Ghee has a more expressive yet more delicate flavor than traditional butter. Deprived of milk-derived solids doesn’t contain lactose and casein. Real and clean fat can be eaten by people intolerant of milk proteins.
