Organic cedar nuts straight from the taiga

Cedar nuts are seeds of coniferous Siberian Cider (Siberian Pine, Pinus Sibrica), naturally occurring only in taiga areas. This evergreen tree is characterized by slow, long-lasting development. The first seeds appear only after 18 years, while full fruiting does not occur until 33 years. The indigenous people of Siberia treated the Siberian Pine trees with the greatest respect and even considered them to be "the tree of eternal life". They appreciated and still appreciate its valuable seeds.
In each cone there are from 100 to even 200 pieces of these small, slightly triangular nuts. Their remarkable properties are evidenced by the fact that cedar nuts are still one of the most important elements of the diet of modern Siberian inhabitants, next to fish and honey. It is also important that cedar nuts are often eaten by animals (both herbivores and even carnivores), especially when their teeth change.

Cedar nuts have been known for millennia and for millennia, they enjoy a declining recognition among people dealing with natural medicine. According to historical sources, the extraordinary power of cedar nuts was appreciated over 2,000 years ago by Celtic Druids who included the cedar tree (from which we obtain cedar nuts) in the Celtic horoscope.

Appetizer, salads, dressings, and pesto

Cedar nuts, like pine nuts, are a tasty snack between meals. They are really delicious, and the only problem is that they disappear too quickly from our package. They can also be used as an addition to countless salads or dinner dishes, but also for baking, both sweet and salty. Based on cedar nuts, you can prepare delicious homemade pesto.
The pesto recipe is really trivial, and its preparation takes only a few minutes. However, it is indispensable for various pasta-based dishes, countless sauces, dressings or marinades, and even casseroles and toasts. Nothing tastes better than hot, crispy mozzarella toast, fresh tomato and our aromatic homemade pesto.
To make the pesto, we need some fresh basil leaves (about 2 glasses), 1 clove of garlic (you can do more if you like more "garlic" flavors), 3-4 tablespoons of previously roasted (preferably in a pan) cedar nuts, virgin olive oil ( 0.5 cups), fresh lemon juice (1-2 tablespoons) and a bit of Parmesan cheese, which you can easily replace with yeast flakes. Then put basil, garlic, cedar nuts and lemon juice in a blender and "blend". We add olive oil until our pesto has the consistency we want. Add Parmesan or yeast flakes and mix gently. Finally, season with pepper and salt ... it's ready !!!
