What does freeze-dried fruit mean?

This process consists in quickly freezing the fruit or vegetable with the use of very low temperature (approx. -40 to - 50 ° C). Then, freeze drying is carried out, i.e. evaporation of ice crystals using reduced pressure, which eliminates over 90% of water from the food.

The phenomenon of lyophilization consists in the fact that the ice immediately turns into a gaseous state, omitting the liquid state phase, thanks to which the products do not lose any nutritional value during this process . They also retain their taste, color and aroma . The last stage is drying fruit and vegetables at room temperature under reduced pressure, which allows you to remove the remains of water, as well as any microbiological contamination.
